Instructions
Sauté the onion, carrots, celery, and garlic in olive oil until softened.
Add diced tomatoes, potatoes, lentils, spices, and broth. Bring to a boil.
Reduce heat and simmer for 30-40 minutes until lentils and potatoes are tender.
Stir in greens and lemon juice; cook for 5 minutes.
Season with salt and pepper to taste. Serve hot.
