A nourishing and hearty vegan lentil soup packed with vegetables and spices, perfect for a comforting meal.

Ingredients

Water or Olive Oil

  • 1/4 cup water or 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2-3 carrots carrots (about 1 cup), diced
  • 2 stalks celery ribs, diced
  • 3 cloves garlic, minced
  • 1 cup green beans, cut into 1-inch pieces (fresh or frozen)
  • 1 can (14oz) diced tomatoes with juices
  • 1 lb baby potatoes, diced
  • 1.5 cups dried brown or green lentils
  • 1.5 teaspoons paprika
  • 0.5 teaspoon cumin
  • 0.5 teaspoon curry
  • 6 cups water or low-sodium broth (plus more as needed)
  • 2 handfuls baby spinach or kale
  • 1 lemon juice of 1 lemon
  • 0.5 cup parsley, chopped

Mineral salt & pepper

  • to taste mineral salt & pepper

Instructions 

  • Sauté the onion, carrots, celery, and garlic in olive oil until softened.
  • Add diced tomatoes, potatoes, lentils, spices, and broth. Bring to a boil.
  • Reduce heat and simmer for 30-40 minutes until lentils and potatoes are tender.
  • Stir in greens and lemon juice; cook for 5 minutes.
  • Season with salt and pepper to taste. Serve hot.
