A comforting and nutritious vegan stew packed with sweet potatoes, beans, and aromatic herbs, perfect for a cozy meal.

2TbspsExtra virgin olive oil
Vegetables
1pieceonion, chopped(You can use white, yellow, or red)
1stalkcelery, diced
1-2piecescarrots, peeled and chopped
Garlic
4clovesgarlic cloves, minced

3sprigsfresh thyme sprigs
Canned Goods
1can15 oz organic white beans, drained and rinsed(See Blog Post for types of white beans)
2cupscubed sweet potatoes
2cupscubed russet or yukon potatoes(You can also use baby creamer potatoes + cut into halves)
4Tbspsorganic tomato paste
3Tbspsorganic all-purpose flour
2tspsOn Everything All-Purpose Blend
1tspsmoked paprika
1tspsea salt
1can28 oz tomato sauce or diced tomatoes
3cupsorganic vegetable stock
1TbspWorcestershire sauce
Instructions
Heat olive oil in a large pot over medium heat. Add chopped onion, celery, and carrots; cook until softened, about 5 minutes.
Add minced garlic and thyme sprigs; cook for 1 minute until fragrant.
Stir in tomato paste and flour; cook for 2 minutes. Add sweet potatoes, potatoes, white beans, tomato sauce, vegetable stock, and Worcestershire sauce. Bring to a boil.
Reduce heat and simmer for 30 minutes until vegetables are tender. Season with smoked paprika and sea salt to taste.
