Hearty Vegan Sweet Potato Stew

A comforting and nutritious vegan stew packed with sweet potatoes, beans, and aromatic herbs, perfect for a cozy meal.

Ingredients

Oil

  • 2 Tbsps Extra virgin olive oil

Vegetables

  • 1 piece onion, chopped (You can use white, yellow, or red)
  • 1 stalk celery, diced
  • 1-2 pieces carrots, peeled and chopped

Garlic

  • 4 cloves garlic cloves, minced

Herbs

  • 3 sprigs fresh thyme sprigs

Canned Goods

  • 1 can 15 oz organic white beans, drained and rinsed (See Blog Post for types of white beans)
  • 2 cups cubed sweet potatoes
  • 2 cups cubed russet or yukon potatoes (You can also use baby creamer potatoes + cut into halves)
  • 4 Tbsps organic tomato paste
  • 3 Tbsps organic all-purpose flour
  • 2 tsps On Everything All-Purpose Blend
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • 1 can 28 oz tomato sauce or diced tomatoes
  • 3 cups organic vegetable stock
  • 1 Tbsp Worcestershire sauce

Instructions 

  • Heat olive oil in a large pot over medium heat. Add chopped onion, celery, and carrots; cook until softened, about 5 minutes.
  • Add minced garlic and thyme sprigs; cook for 1 minute until fragrant.
  • Stir in tomato paste and flour; cook for 2 minutes. Add sweet potatoes, potatoes, white beans, tomato sauce, vegetable stock, and Worcestershire sauce. Bring to a boil.
  • Reduce heat and simmer for 30 minutes until vegetables are tender. Season with smoked paprika and sea salt to taste.

Notes

This stew is perfect served with crusty bread or over rice for a complete meal.
