Ingredients

Streusel Topping

  • 50 g all-purpose flour
  • 50 g brown sugar
  • 1 tsp ground cinnamon
  • 50 g unsalted butter, melted

Cinnamon Sugar Ribbon

  • 50 g brown sugar
  • 1 tsp ground cinnamon

Loaf Cake Base

  • 300 g all-purpose flour
  • 1 ½ tsp baking powder
  • 1 tsp baking soda

Wet Ingredients

  • 150 g light-tasting oil
  • 150 g granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 250 g buttermilk

Icing

  • 50 g powdered sugar
  • 1 ¼ tsp milk (dairy or non-dairy)
  • 1 tsp vanilla extract

Instructions 

  • Mix flour, brown sugar, and cinnamon; stir in melted butter for streusel. Cool.
  • Combine brown sugar and cinnamon for ribbon; set aside.
  • Preheat oven to 350°F; line loaf pan.
  • Mix dry ingredients; whisk oil, sugar, eggs, vanilla, and buttermilk; combine.
  • Layer batter, sprinkle cinnamon sugar, add streusel; bake 45 mins. Cool.
  • Mix powdered sugar, milk, vanilla; drizzle over cooled cake.
