A savory quick bread packed with herbs and sharp cheddar, perfect for a flavorful snack or side.

Ingredients

Dry ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¾ teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons granulated sugar

Wet ingredients

  • 6 tablespoons cold unsalted butter (diced)
  • 1 ½ cups shredded extra sharp cheddar cheese
  • ¼ cup parsley (finely chopped)
  • 1 tablespoon rosemary (finely chopped)
  • 1 tablespoon thyme (finely chopped)
  • 1 cup cold buttermilk
  • 2 large eggs

Optional topping

  • to taste flaky sea salt (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Grease a loaf pan.
  • Mix dry ingredients. Grate butter into mixture, then add cheese and herbs.
  • Whisk together buttermilk and eggs. Combine with dry ingredients gently.
  • Pour batter into pan, top with reserved cheese and sea salt. Bake 40-50 mins until golden.
  • Cool slightly before slicing. Enjoy warm.

Notes

This bread is best enjoyed warm and fresh from the oven.
