  • 4 pieces bone-in, skin-on chicken thighs (about 2.5 lbs total)
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, finely minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (adjust to taste)
  • 0.5 teaspoon freshly cracked black pepper
  • 1 whole lemon, thinly sliced
  • 1 cup chicken broth (or low-sodium broth)

Optional Garnish

Instructions 

  • Preheat oven to 425°F (220°C).
  • Mix olive oil, garlic, rosemary, thyme, oregano, paprika, salt, and pepper to form a herb paste.
  • Pat chicken dry, rub herb paste under and over skin. Arrange in skillet with lemon slices around.
  • Pour broth around chicken, roast for 35–40 minutes until internal temp reaches 165°F (75°C).
  • Optional: Broil for 2–3 minutes for crispy skin. Rest for 5–10 minutes, garnish with parsley, then serve.

Ensure the chicken reaches an internal temperature of 165°F for safety and optimal juiciness.
