Dry Ingredients

  • 2 cups granulated sugar ((400g))
  • 1.75 cups all-purpose flour ((235g))
  • 0.75 cups unsweetened cocoa powder ((64g))
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs ((room temperature*))
  • 1 cup buttermilk ((227g))
  • 0.5 cup oil ((99g, vegetable or canola oil))
  • 2 teaspoons vanilla extract
  • 1 cup boiling water ((237g, or hot coffee))
  • 0.5 cup melted butter ((113g))
  • 0.67 cup unsweetened cocoa powder ((57g))
  • 3 cups powdered sugar ((360g))
  • 0.33 cup milk ((83g))
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat oven to 350°F(180°C) and prepare baking pans.
  • Mix dry ingredients in a large bowl.
  • Add wet ingredients and mix until combined, then stir in boiling water.
  • Pour batter into pans and bake for 30-35 minutes.
  • Make frosting by combining butter, cocoa, powdered sugar, milk, and vanilla.
  • Assemble cake layers with frosting and serve.

Notes

For a richer flavor, use hot coffee instead of boiling water.
