Ingredients

Fruits and Dairy

  • 3 medium ripe bananas (mashed approximately 1 cup)
  • 2 large eggs
  • 0.25 cup plain Greek yogurt
  • 0.25 cup unsweetened applesauce
  • 0.25 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1.5 cups oat flour or finely ground rolled oats
  • 0.5 cup vanilla or unflavored whey protein powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt

Add-ins

  • 0.33 cup chopped walnuts or pecans
  • 0.33 cup dark chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Mash bananas, then mix with eggs, Greek yogurt, applesauce, honey, and vanilla until smooth.
  • Combine dry ingredients in a separate bowl, then fold into wet mixture until just combined.
  • Fold in nuts and chocolate chips, then divide batter evenly into muffin cups.
  • Bake for 18-22 minutes, cool in pan for 5 minutes, then transfer to wire rack to cool completely.

Notes

For extra flavor, add a dash of nutmeg or a sprinkle of chia seeds.
