Instructions
Melt butter in a pot over medium heat.
Add onion, carrot, and celery; cook for 10 minutes.
Add garlic; cook for 1 minute.
Add smoked paprika and flour; cook for 1 minute.
Add broth and broccoli; simmer for 8-9 minutes.
Add milk, cottage cheese, and cheddar; stir until melted.
Notes
For a creamier texture, blend a portion of the soup.
