Ingredients

Grains

  • 1 cup quinoa
  • 2 cups water

Protein

  • 2 chicken breasts chicken breasts, grilled and sliced

Beans and Vegetables

  • 1 cup black beans, rinsed
  • 1 cup corn, cooked
  • 1 avocado avocado, diced
  • 1 cup cherry tomatoes, halved
  • 0.25 cup cilantro, chopped
  • 1 lime juice of 1 lime

Seasonings

  • to taste Salt and pepper

Instructions 

  • Cook quinoa in boiling water for 15 minutes, then fluff.
  • Grill chicken breasts and slice.
  • Combine chicken, black beans, corn, avocado, and cherry tomatoes in a bowl.
  • Add cooked quinoa to the bowl, then drizzle with lime juice and season with salt and pepper.
  • Toss gently and garnish with chopped cilantro before serving.

Notes

For extra flavor, marinate chicken beforehand or add a dollop of Greek yogurt.
