Ingredients

Grains

  • 1 cup cooked quinoa

Protein

  • 1 lb chicken breast, grilled or baked

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • 0.5 red onion red onion, thinly sliced
  • 1 cup spinach or mixed greens

Dressing & Oils

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder

Seasonings

  • to taste Salt and pepper

Instructions 

  • Cook quinoa and set aside.
  • Grill or bake seasoned chicken until done; slice.
  • Chop vegetables and arrange with quinoa and chicken.
  • Drizzle with olive oil and lemon juice.
  • Garnish with feta or avocado if desired.
