This delicious baked oatmeal combines the flavors of cinnamon rolls with the nutrition of oats and protein, making it a perfect breakfast option.

Ingredients

Dry Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup unsweetened almond milk ((or milk of choice))
  • 1/2 cup plain greek yogurt
  • 2 tablespoons honey or maple syrup
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup vanilla protein powder
  • 2 tablespoons melted coconut oil or unsalted butter
  • 1/4 cup raisins ((optional))
  • 1/4 cup chopped walnuts ((optional))

Instructions 

  • Preheat oven to 350°F (175°C) and grease a baking dish.
  • Combine rolled oats, baking powder, cinnamon, and salt in a bowl.
  • Whisk almond milk, yogurt, honey, vanilla, and eggs in another bowl.
  • Add wet ingredients to dry ingredients and mix until combined.
  • Fold in protein powder, melted oil/butter, raisins, and walnuts.
  • Pour into baking dish and bake for 35-40 minutes until golden.

Notes

Let cool for 10 minutes before slicing for easier serving.
