Liquid Egg Whites

Cottage Cheese

  • 1 cup cottage cheese

Shredded Cheddar Cheese

  • 1/2 cup shredded cheddar cheese

Green Onions

  • 1/4 cup finely chopped green onions

Red Bell Pepper

  • 1/4 cup finely diced red bell pepper

Spinach

  • 1/4 cup chopped spinach

Salt

  • 1/2 teaspoon salt

Black Pepper

  • 1/4 teaspoon black pepper

Garlic Powder

  • 1/4 teaspoon garlic powder

Olive Oil or Cooking Spray

  • 1 tablespoon olive oil or cooking spray

Instructions 

  • Preheat oven to 350°F and grease a 12-cup muffin tin.
  • Blend egg whites, cottage cheese, salt, black pepper, and garlic powder until smooth.
  • Stir in cheddar cheese, green onions, red bell pepper, and spinach.
  • Divide mixture into muffin cups and bake for 22-25 minutes.
  • Cool for 5 minutes, then remove and serve warm or store.
