A delicious and nutritious pudding combining chia seeds and fresh strawberries for a high-protein treat.

Ingredients

Base

  • 1 cup almond milk (or any plant-based milk)
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup (or sweetener of choice)
  • 1 cup strawberries (fresh or frozen, pureed)
  • 1 teaspoon vanilla extract

Topping

  • as desired fresh strawberries (for topping (optional))

Instructions 

  • Mix almond milk, chia seeds, maple syrup, vanilla, and pureed strawberries.
  • Stir well and let sit for 10 minutes, then stir again.
  • Cover and refrigerate for at least 2 hours or overnight.
  • Stir before serving and top with fresh strawberries if desired.
