  • 1 cup broccoli florets, chopped
  • 1 cup bell pepper, diced
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup spinach, chopped
  • 1/2 cup red onion, finely chopped
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried oregano
  • Cooking Spray

Instructions 

  • Preheat oven to 375°F (190°C).
  • Grease a baking dish with cooking spray or olive oil.
  • Combine cottage cheese, broccoli, bell pepper, zucchini, cherry tomatoes, spinach, and red onion in a bowl.
  • Whisk eggs, olive oil, garlic powder, onion powder, black pepper, salt, and oregano in another bowl.
  • Pour egg mixture over vegetables and stir to coat.
  • Transfer to baking dish, sprinkle mozzarella on top, and bake for 30-35 minutes.
