Ingredients

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1 cup vanilla protein powder ((whey or casein blend recommended))
  • 0.75 cup granulated sugar ((or sweetener of choice))
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt

Wet Ingredients

  • 1 cup milk ((whole, 2%, or unsweetened almond milk))
  • 2 large eggs (room temperature preferred)
  • 0.33 cup coconut oil ((melted, or vegetable oil))
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup blueberries (fresh or frozen (do not thaw if frozen))
  • 1 tablespoon coarse sugar ((optional, for topping))

Instructions 

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin.
  • Mix dry ingredients in a bowl. Whisk wet ingredients separately.
  • Combine wet and dry, fold in blueberries gently.
  • Divide batter into muffin cups, top with coarse sugar if desired.
  • Bake for 18-22 minutes until golden and a toothpick comes out clean. Cool before serving.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg to the dry ingredients.
