Ingredients

Dough

  • 7 g instant dry yeast
  • 480 ml warm water
  • 4 tbsp olive oil (plus extra for brushing)
  • 780 g strong bread flour (plus extra for rolling)
  • 1.5 tsp sugar
  • 1.5 tsp table salt

Instructions 

  • Mix yeast with warm water and let foam for 5 minutes.
  • Add oil, flour, sugar, and salt; mix and knead for 10 minutes until sticky but smooth.
  • Let dough prove in an oiled bowl for 60-90 minutes until doubled.
  • Divide dough into 12 pieces, roll into flatbreads about 19cm diameter and ½ cm thick.
  • Heat oil in a pan, cook each flatbread 60-90 seconds per side until bubbles form and golden.
  • Stack cooked flatbreads, cover with a towel to keep warm until serving.

Notes

Brush flatbreads with extra oil or herbs for added flavor.
