Ingredients

Dough

  • 3/4 cup warm water (about 110°F)
  • 1 egg egg (room temperature)
  • 3 Tbsp granulated sugar
  • 1 1/2 tsp fine sea salt
  • 1 Tbsp instant yeast (rapid rise)
  • 3 Tbsp unsalted butter (softened)
  • 3 1/4 cups unbleached all-purpose flour (plus more as needed) (400g total)
  • 1 egg additional egg
  • 1 Tbsp water
  • 1/2 Tbsp sesame seeds (or Everything Bagel Seasoning)

Instructions 

  • Mix warm water, egg, sugar, salt, and yeast; whisk for 1 min to activate.
  • Add butter and most flour; mix until combined, then knead for 5-6 min until smooth.
  • Let dough rise in a warm place for 1-1.5 hours until doubled.
  • Divide dough into 8 balls, shape into smooth rounds, flatten to 3-3.5 inches, and let rise for 1-1.5 hours.
  • Brush with egg wash, sprinkle seeds, and bake at 400°F for 15-16 min until golden.
  • Cool on a rack before slicing and storing.

Notes

Ensure dough is slightly sticky but manageable; adjust flour as needed.
