Homemade Protein Bars

Delicious and nutritious homemade protein bars perfect for on-the-go snacking or post-workout recovery.

Ingredients

Base

  • 1 cup old-fashioned oats
  • 1 cup peanut butter (stir well if using natural butter)
  • 0.25 cup honey
  • 0.5 tablespoon vanilla extract (optional)
  • 0.125 teaspoon salt
  • 0.33 cup vanilla protein powder (see note 1)
  • 0.25 cup mini chocolate chips
  • 3 tablespoons dark chocolate chips
  • 0.5 teaspoon melted coconut oil

Instructions 

  • Line an 8.5 x 4.5-inch bread pan with parchment paper or foil, leaving overhang.
  • Add oats to a blender and pulse until coarse flour forms. Add remaining ingredients and pulse until a thick dough develops.
  • Press dough evenly into the prepared pan.
  • Combine chocolate chips with coconut oil, microwave in 15-second bursts, stirring until smooth. Drizzle over bars and sprinkle with sea salt if desired.
  • Refrigerate until bars are set, about 1 hour. Remove from pan using overhang and cut into 10-12 bars.

Notes

For best results, press the dough firmly into the pan and refrigerate before cutting.
