Instructions
Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery; cook until vegetables are tender, about 5 minutes.
Add minced garlic, salt, black pepper, thyme, and bay leaf; cook for 1 minute.
Pour in chicken broth and add chicken. Bring to a boil, then reduce heat and simmer until chicken is cooked through, about 30 minutes. Remove chicken, shred, and return to the pot.
Add egg noodles and cook until tender, about 8 minutes. Stir in chopped parsley before serving.
