A comforting and hearty homemade chicken noodle soup perfect for any day. Made with fresh vegetables, tender chicken, and egg noodles, it's a classic favorite.

Ingredients

olive oil

  • 2 tablespoons olive oil

vegetables

  • 1 medium onion (chopped)
  • 3 carrots carrots (sliced)
  • 3 celery stalks celery stalks (sliced)
  • 3 cloves garlic (minced)

seasonings

  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf bay leaf
  • 8 cups chicken broth

chicken

  • 1 pound bone-in chicken thighs or breasts

pasta

  • 2 cups egg noodles

fresh herbs

  • 2 tablespoons fresh parsley (chopped)

Instructions 

  • Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery; cook until vegetables are tender, about 5 minutes.
  • Add minced garlic, salt, black pepper, thyme, and bay leaf; cook for 1 minute.
  • Pour in chicken broth and add chicken. Bring to a boil, then reduce heat and simmer until chicken is cooked through, about 30 minutes. Remove chicken, shred, and return to the pot.
  • Add egg noodles and cook until tender, about 8 minutes. Stir in chopped parsley before serving.

Notes

You can use leftover cooked chicken to save time.
