Ingredients

Wet ingredients

  • ½ cup oil or applesauce
  • ½ cup brown sugar
  • ¼ cup honey or maple syrup
  • 2 large eggs
  • 1 cup plain Greek yogurt
  • 1 cup milk (of choice)
  • 1 ½ teaspoons pure vanilla extract

Dry ingredients

  • 1 ½ cups wheat or oat bran
  • 1 cup flour (*)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon coarse salt

Instructions 

  • Preheat oven to 350°F (175°C). Line a muffin tin with liners.
  • Mix oil, brown sugar, and honey until fluffy. Add eggs, yogurt, milk, and vanilla; mix well.
  • Combine dry ingredients in a separate bowl. Fold dry into wet until just combined.
  • Use a scoop to fill muffin cups. Bake for 17-22 minutes until set. Cool and remove.
