A moist and flavorful cornbread infused with honey, perfect for any meal or as a snack.

Ingredients

Dry ingredients

  • 1.5 cups whole wheat pastry flour
  • 1 cup yellow cornmeal
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 0.75 teaspoon salt

Wet ingredients

  • 1 cup buttermilk
  • 0.75 cup frozen corn kernels (thawed)
  • 2 large eggs
  • 0.25 cup honey (divided)
  • 2 tablespoons honey (remaining)
  • 0.25 cup olive oil (divided)
  • 1 tablespoon olive oil (remaining)

Topping

  • to taste flaky sea salt

Instructions 

  • Preheat oven to 400°F (204°C) and heat a 10-inch cast-iron skillet.
  • Mix dry ingredients in a bowl. In a blender, pulse wet ingredients until combined.
  • Pour wet into dry, fold gently. Pour remaining oil into skillet, then add batter and smooth surface.
  • Bake for 24–25 minutes until golden. Warm remaining honey, brush over cornbread, sprinkle with sea salt, and cool for 15 minutes.

Notes

For extra flavor, serve warm with butter or additional honey.
