Instructions
Preheat oven to 160°C (325°F). Line a 23x23cm pan with parchment.
Crush cookies, melt butter, mix, and press into pan to form base.
Mix cream cheese, xylitol, honey, vanilla, then add eggs. Pour over base.
Bake for 45-50 minutes, cool, then chill for at least 4 hours.
Top with fig slices, chopped pistachios, and drizzle with honey before serving.
