Delight in these creamy cheesecake bars topped with fresh figs and a honey drizzle, perfect for a sophisticated dessert.

Ingredients

Base

  • 7 oz sugar-free shortbread cookies
  • 1/4 cup butter, melted

Filling

  • 21 oz cream cheese (at room temperature)
  • 1/4 cup xylitol or sugar
  • 3.5 oz honey (from local sources)
  • 1 tsp vanilla extract
  • 2 large eggs (at room temperature)

Topping

  • 5-6 pieces fresh figs, sliced
  • 2 tbsp pistachios, chopped
  • some honey for drizzling

Instructions 

  • Preheat oven to 160°C (325°F). Line a 23x23cm pan with parchment.
  • Crush cookies, melt butter, mix, and press into pan to form base.
  • Mix cream cheese, xylitol, honey, vanilla, then add eggs. Pour over base.
  • Bake for 45-50 minutes, cool, then chill for at least 4 hours.
  • Top with fig slices, chopped pistachios, and drizzle with honey before serving.

Notes

Chill the cheesecake thoroughly for best texture and flavor.
