Honey Garlic Chicken Bites with Creamy Rice

A flavorful dish combining tender honey garlic chicken bites served over creamy, cheesy rice for a satisfying meal.

Ingredients

Chicken

  • 0.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tbsp olive oil
  • Salt to taste Salt
  • 1/8 tsp black pepper
  • 1 tsp garlic powder
  • 6 cloves fresh garlic, minced
  • 1/4 cup honey
  • 2 tbsp soy sauce (low sodium preferred)
  • 1/2 tbsp apple cider vinegar
  • 1 tbsp unsalted butter

Creamy Rice

  • 1 1/2 cups jasmine rice (or long-grain white rice)
  • 3 cups chicken broth (low sodium)
  • 1 cup heavy cream
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup cream cheese, softened and cubed
  • 1/2 cup Parmesan cheese, freshly grated
  • 2 tbsp unsalted butter
  • 1 tsp salt (adjust to taste)
  • 1/8 tsp black pepper
  • 1 tsp Italian seasoning

Instructions 

  • Rinse rice, then cook in boiling chicken broth for 18-20 minutes. Let stand covered for 5 minutes.
  • Pat chicken dry, season with salt, pepper, and garlic powder. Cook in hot oil 3-4 minutes per side until golden and cooked through.
  • Add butter and garlic to skillet, sauté briefly, then stir in honey, soy sauce, and vinegar. Simmer 2-3 minutes until sauce thickens.
  • Stir heavy cream, cream cheese, mozzarella, and Parmesan into rice until creamy and cheese melts. Season to taste.
  • Serve chicken bites over creamy rice, drizzle with sauce, garnish with parsley and Parmesan, and serve immediately.

Notes

For extra flavor, sprinkle with red pepper flakes or sesame seeds.
