Instructions
Combine warm water, yeast, honey, and olive oil; let sit until frothy, about 5 minutes.
Mix in whole wheat flour, vital wheat gluten (if using), and salt to form a dough.
Knead the dough until smooth, about 8-10 minutes.
Let the dough rise in a warm place until doubled in size, about 1 hour.
Shape the dough into a loaf, place in a greased pan, and let rise for 30 minutes.
Bake at 375℉ (190℃) for 35 minutes until golden brown.
Notes
For a softer crust, cover the bread with a damp towel during the first rise.
