Ingredients

Dough

  • 1 cup whole milk (warm (110℉))
  • 1 cup water (warm (110℉))
  • 1 tablespoon instant yeast (or active dry yeast)
  • 1 teaspoon sugar
  • 1/2 cup honey
  • 2 cups whole wheat flour
  • 4 cups bread flour (or all-purpose flour, plus extra as needed)
  • 1 tablespoon salt
  • 6 tablespoons butter (melted)
  • 1/2 tablespoon olive oil

Optional Topping

  • Unsalted butter (for topping bread slices)

Instructions 

  • Combine warm milk and water, sprinkle yeast and sugar, then let sit until foamy (5–10 min).
  • Add honey and whole wheat flour to the yeast mixture; let sit for 10 min.
  • Melt butter, cool, then mix with salt. Add to the dough, then knead with additional flour until smooth.
  • Let the dough rise in a greased bowl until doubled (about 1 hour), then shape into loaves and rise again for 1 hour.
  • Preheat oven to 375°F (190°C), bake for 30–35 min, brush with butter, then cool before slicing.
