A hearty and flavorful Irish potato bread made with mashed and grated potatoes, perfect for a comforting meal.

Ingredients

Potatoes

  • 3/4 cup cooked mashed potatoes (boil potatoes and mash to a mashed potato consistency)
  • 3/4 cup raw grated potatoes (peel skins, grate, drain liquid)
  • 1 egg egg
  • 1 egg white egg white
  • 1/3 cup vegetable oil
  • 3/4 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 3 1/4 cups flour
  • 1 1/2 tablespoons baking powder
  • 1 teaspoon salt

Instructions 

  • Combine mashed and grated potatoes in a bowl, then add egg, egg white, Parmesan, garlic powder, milk, and oil; whisk until smooth.
  • Mix flour, baking powder, and salt in a separate bowl.
  • Gradually add dry ingredients to wet, mixing until a soft dough forms. Knead briefly, shape into a ball, and place in an oiled pan.
  • Cut an X on top of the dough, then bake at 375°F (190°C) for 45-55 minutes until golden brown.
  • Cool on a wire rack for 10 minutes before removing from pan and slicing.

Notes

Ensure potatoes are well-drained to prevent dough from becoming too sticky.
