These banana pecan muffins are moist, flavorful, and packed with crunchy nuts, perfect for breakfast or a snack.

Ingredients

Dry ingredients

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Wet ingredients

  • 2 large ripe bananas (mashed) (about 1 cup)
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup chopped pecans

Instructions 

  • Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  • Mix dry ingredients in a bowl: flour, baking soda, baking powder, cinnamon, and salt.
  • In a separate bowl, mash bananas and combine with sugars, oil, eggs, and vanilla.
  • Gradually add dry ingredients to wet, then fold in chopped pecans.
  • Divide batter evenly into muffin cups and bake for 20 minutes or until golden.

Notes

For extra flavor, sprinkle some additional chopped pecans on top before baking.
