Ingredients

Dry ingredients

  • 1 1/8 cups flour (King Arthur all-purpose flour)
  • 1 1/2 tbsp baking powder
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 3/4 tbsp vanilla

Wet ingredients

  • 1 1/4 cups soy milk (Silk Unsweetened)
  • 1/4 cup greek yogurt (makes the pancakes extra fluffy and moist)
  • 1 tbsp water
  • 1 tbsp butter (melted and cooled slightly)

Instructions 

  • Mix dry ingredients in a bowl.
  • Whisk wet ingredients together in a separate bowl.
  • Combine wet and dry ingredients until just mixed.
  • Heat a skillet and pour batter to form pancakes.
  • Cook until bubbles form, then flip and cook until golden.

Notes

For extra flavor, add fresh berries or a drizzle of honey.
