Ingredients

Dough and Crust

  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned rolled oats (do not substitute quick oats)
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon salt (adjust to taste)

Filling

  • 2 cups coarsely diced ripe mango (thaw if frozen and dry)
  • 1/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8-inch square pan with parchment or foil.
  • Mix melted butter, flour, oats, sugars, and salt to form coarse crumbs. Reserve 1 cup for topping.
  • Press remaining mixture into the pan to form the crust. Toss mango, sugar, lemon juice, and cornstarch until coated. Spread over crust.
  • Sprinkle reserved crumble over mango layer. Bake for 50–55 minutes until golden and bubbling. Cool completely before slicing.

Notes

Chill the bars for easier slicing and a firmer filling.
