Ingredients

Vegetables

  • 1 head Cauliflower (florets, roasted)
  • 1 medium Onion (sautéed)
  • 2 cloves Garlic (minced)
  • 4 cups Vegetable broth
  • 1 cup Heavy cream (added at the end)
  • 2 tablespoons Olive oil (for roasting and sautéing)
  • 1 teaspoon Salt (to taste)
  • 1 teaspoon Black pepper (to taste)
  • 1 teaspoon Fresh thyme or rosemary (optional)

Instructions 

  • Roast the cauliflower florets with 1 tablespoon of olive oil until golden, about 20 minutes.
  • Sauté the chopped onion and minced garlic in 1 tablespoon of olive oil until translucent, about 5 minutes.
  • Add the roasted cauliflower to the sautéed onions and garlic, then pour in the vegetable broth. Simmer for 10 minutes.
  • Puree the mixture until smooth using an immersion blender or blender. Stir in the heavy cream and season with salt, pepper, and herbs if using.
  • Heat through for 2-3 minutes, then serve hot.

Notes

For a vegan version, substitute heavy cream with coconut milk or omit it entirely.
