Ingredients

Protein

  • 1.5 pounds Boneless, skinless chicken breasts (2-3 breasts)

Vegetables

  • 2 cups Broccoli (cut into bite-sized pieces)
  • 3 large carrots (cut into bite-sized chunks)

Seasonings

  • 2 teaspoons Italian seasoning
  • 1.5 teaspoons Kosher salt
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Fresh black pepper

Other

  • Olive oil Olive oil

Instructions 

  • Preheat oven to 400°F. Line a baking sheet with foil.
  • Mix seasonings in a small dish. Slice chicken in half horizontally.
  • Arrange chicken on the sheet, coat with olive oil, and rub with seasoning. Add vegetables around chicken, toss with olive oil, and sprinkle remaining seasoning.
  • Bake for 30 minutes until chicken is cooked and vegetables are tender.
  • Rest for 5 minutes before serving.
