A moist and flavorful carrot cake topped with creamy frosting, perfect for any celebration.

Ingredients

Cake Batter

  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 1 tsp vanilla extract
  • 1/4 tsp lemon extract
  • 4 eggs eggs
  • 3-4 cups fresh carrots (shredded)
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 cup chopped nuts (walnuts and pecans are best)

Frosting

  • 1/2 cup butter or margarine (softened)
  • 8 ounces cream cheese (softened)
  • 2 - 2 1/2 cups powdered sugar
  • 1 - 1 1/2 tsp vanilla extract
  • 1 dash salt salt (if desired)

Instructions 

  • Preheat oven to 350°F (175°C). Mix wet ingredients and add shredded carrots.
  • Combine dry ingredients and gradually mix into wet mixture.
  • Pour batter into greased pans and bake for 45 minutes.
  • Allow cakes to cool before frosting.
  • Mix frosting ingredients until smooth and spread over cooled cake.

Notes

For extra flavor, add a pinch of nutmeg or ginger to the batter.
