A moist and flavorful carrot cake topped with creamy frosting, perfect for any celebration.
Ingredients
Cake Batter

vegetable oil

sugar

vanilla extract

lemon extract

fresh carrots (shredded)

all-purpose flour

chopped nuts (walnuts and pecans are best)
Frosting

butter or margarine (softened)

cream cheese (softened)

powdered sugar

salt (if desired)
Instructions
Preheat oven to 350°F (175°C). Mix wet ingredients and add shredded carrots.
Combine dry ingredients and gradually mix into wet mixture.
Pour batter into greased pans and bake for 45 minutes.
Allow cakes to cool before frosting.
Mix frosting ingredients until smooth and spread over cooled cake.
Notes
For extra flavor, add a pinch of nutmeg or ginger to the batter.
