Ingredients

Vegetables

  • 2 cups kale, chopped
  • 1 cup quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese (optional)

Dressings

  • Olive oil
  • Lemon juice
  • Salt and pepper to taste

Instructions 

  • Cook the quinoa according to package instructions, then let it cool.
  • In a large bowl, mix the chopped kale, cherry tomatoes, and red onion.
  • Add the cooled quinoa to the bowl.
  • Drizzle with olive oil and lemon juice, then toss everything together.
  • Add feta cheese, salt, and pepper to taste. Enjoy!
