Ingredients

Squash

  • 2 pieces acorn squash
  • 1 pieces honeynut squash
  • 1 pieces delicata squash

Grains

  • 1 cup farro

Aromatics

  • 2 cloves garlic
  • 1 medium shallots

Meat & Sausage

  • 1/2 pound ground meat (beef, turkey, chicken, or lamb)
  • 1/2 pound spicy sausage (plant-based or regular)

Greens

  • 2 cups kale

Cheese

  • 1/2 cup Havarti cheese
  • 1/2 cup Gouda cheese
  • 1/2 cup Monterey Jack cheese

Toppings

  • 1/4 cup roasted salted pumpkin seeds
  • 1/4 cup pomegranate seeds

Instructions 

  • Roast the squash until tender.
  • Prepare the filling by cooking grains and sautéing aromatics, then add meat, greens, and cheese.
  • Stuff the roasted squash with the filling.
  • Top with pumpkin seeds and pomegranate seeds before serving.
