Ingredients

Dough

  • 1 pound pizza dough (whole wheat or store-bought)

Cheese

  • 2 cups grated low-moisture part-skim mozzarella cheese

Kale

  • 1 cup lightly packed chopped kale
  • 3 cups packed kale (Tuscan/lacinato) (ribs removed, roughly chopped)

Nuts

  • ¾ cup pecans or walnuts

Liquids

  • 2 tablespoons lemon juice (about 1 small lemon)
  • 2 to 3 cloves garlic (depending on size)
  • ¾ teaspoon fine-grain sea salt

Seasonings

  • to taste black pepper (freshly ground)

Olive Oil

  • ½ cup olive oil

Instructions 

  • Preheat oven to 500°F (260°C). Prepare dough and roll out on parchment paper.
  • Make the pesto: blend kale, nuts, lemon juice, garlic, salt, pepper, and drizzle in olive oil until smooth.
  • Spread pesto evenly over the rolled-out dough, then sprinkle with cheese.
  • Toss chopped kale with olive oil and salt, then distribute over the pizza.
  • Transfer pizza to oven and bake for 10-12 minutes until crust is golden and cheese bubbles.
  • Optional: sprinkle red pepper flakes, slice, and serve.

Notes

Use a pizza stone for a crispier crust and roll the dough as thin as possible for best results.
