  • 6 pieces bone-in skin-on chicken thighs
  • 0.25 cup extra virgin olive oil
  • 4 cloves garlic (minced)
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tsp lemon zest (from one lemon)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions 

  • Season the chicken thighs with salt, pepper, oregano, and thyme.
  • Heat olive oil in a skillet over medium-high heat and sear the chicken thighs until golden brown, about 5 minutes per side.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Pour in lemon juice and sprinkle lemon zest over the chicken, then reduce heat and simmer for 15 minutes until cooked through.
  • Serve hot, garnished with additional lemon zest if desired.

Notes

For extra flavor, marinate the chicken with lemon and herbs for 30 minutes before cooking.
