A fresh and flavorful Mediterranean chicken salad featuring lemon, herbs, and crisp vegetables, perfect for a light lunch or dinner.

Ingredients

Marinade and Dressing

  • 2 tablespoons olive oil
  • 0.25 cup fresh lemon juice (about 1 lemon)
  • 2 tablespoons water
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons dried basil
  • 2 teaspoons minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • to taste cracked black pepper
  • 1 pound boneless, skinless chicken thighs or breasts

Salad Ingredients

  • 4 cups Romaine (or Cos) lettuce leaves (washed and dried)
  • 1 large cucumber (diced)
  • 2 large Roma tomatoes (diced)
  • 1 red onion (thinly sliced)
  • 1 avocado sliced
  • cup pitted Kalamata or black olives (sliced (optional))
  • 2 lemon wedges to serve

Instructions 

  • Whisk all marinade ingredients in a large jug. Pour half into a dish and refrigerate the rest.
  • Add chicken to the marinade, coat well, and marinate for 15–30 minutes. Prepare salad ingredients in a large bowl.
  • Heat 1 tablespoon olive oil and grill chicken until cooked through. Rest, then slice.
  • Arrange sliced chicken over salad, drizzle with reserved dressing, and serve with lemon wedges.

Notes

Marinate chicken for deeper flavor and serve immediately for best freshness.
