Instructions
Whisk all marinade ingredients in a large jug. Pour half into a dish and refrigerate the rest.
Add chicken to the marinade, coat well, and marinate for 15–30 minutes. Prepare salad ingredients in a large bowl.
Heat 1 tablespoon olive oil and grill chicken until cooked through. Rest, then slice.
Arrange sliced chicken over salad, drizzle with reserved dressing, and serve with lemon wedges.
Notes
Marinate chicken for deeper flavor and serve immediately for best freshness.
