Instructions
Pat chicken thighs dry with paper towels for crispy skin.
Whisk together olive oil, lemon juice, rosemary, thyme, garlic, salt, pepper, and paprika.
Rub herb mixture onto chicken, place in baking dish, and arrange lemon slices and rosemary around it.
Preheat oven to 400°F (200°C) and roast chicken for 35-45 minutes until golden and internal temp reaches 165°F (74°C).
Rest chicken for 5-10 minutes before serving to retain juices.
Notes
For extra crispiness, broil for the last 2-3 minutes.
