Instructions
Pat chicken thighs dry and prepare the herb mixture.
Whisk olive oil, lemon juice, herbs, garlic, salt, pepper, and paprika.
Rub the mixture onto chicken, place in baking dish, and arrange lemon slices and rosemary around.
Preheat oven to 400°F (200°C) and roast for 35-45 minutes until skin is crispy and internal temp reaches 165°F (74°C).
