Ingredients

  • 4 pieces chicken thighs, bone-in and skin-on
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 1 piece Zest of 1 lemon
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • for garnish Fresh parsley, chopped

Instructions 

  • Preheat oven to 425°F (220°C).
  • Mix olive oil, lemon juice, lemon zest, garlic, oregano, thyme, paprika, salt, and pepper to make marinade.
  • Marinate chicken thighs for at least 30 minutes.
  • Arrange chicken skin-side up in a baking dish and roast for 35-40 minutes.
  • Let rest 5 minutes, then garnish with chopped parsley before serving.

Ensure chicken reaches an internal temperature of 165°F (75°C) for safety.
