A hearty and nutritious lentil vegetable soup perfect for a comforting meal. Easy to prepare with simple ingredients and customizable with fresh greens.

1pieceyellow onion, diced
2stalkscelery, diced
1largecarrot, diced
5ouncesmushrooms, diced
8ounceswhite potato, diced
4clovesgarlic, minced
1can (15-ounce)diced tomatoes
6cupsvegetable broth
1cupgreen or brown lentils, rinsed and drained
1.5teaspoonsItalian seasoning
1–2cupsfresh baby spinach (optional)
to tasteSalt and pepper
Instructions
Dice the onion, carrot, celery, mushrooms, and potato. Mince the garlic.
Heat a large pot, sauté vegetables for 7–8 minutes with water or broth.
Add garlic, mushrooms, potato, Italian seasoning; cook 2–3 minutes.
Pour in tomatoes, broth, and lentils; bring to a boil.
Reduce heat, cover, and simmer 25–30 minutes until lentils are tender. Add spinach in last 2 minutes.
Season with salt and pepper, serve hot, garnished if desired.
Notes
For extra flavor, add fresh herbs or a squeeze of lemon before serving.
