A hearty and nutritious lentil vegetable soup perfect for a comforting meal. Easy to prepare with simple ingredients and customizable with fresh greens.

Ingredients

Vegetables

  • 1 piece yellow onion, diced
  • 2 stalks celery, diced
  • 1 large carrot, diced
  • 5 ounces mushrooms, diced
  • 8 ounces white potato, diced
  • 4 cloves garlic, minced
  • 1 can (15-ounce) diced tomatoes
  • 6 cups vegetable broth
  • 1 cup green or brown lentils, rinsed and drained
  • 1.5 teaspoons Italian seasoning
  • 1–2 cups fresh baby spinach (optional)
  • to taste Salt and pepper

Instructions 

  • Dice the onion, carrot, celery, mushrooms, and potato. Mince the garlic.
  • Heat a large pot, sauté vegetables for 7–8 minutes with water or broth.
  • Add garlic, mushrooms, potato, Italian seasoning; cook 2–3 minutes.
  • Pour in tomatoes, broth, and lentils; bring to a boil.
  • Reduce heat, cover, and simmer 25–30 minutes until lentils are tender. Add spinach in last 2 minutes.
  • Season with salt and pepper, serve hot, garnished if desired.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
