Light Brioche Hamburger Buns

Soft, fluffy, and slightly sweet brioche buns perfect for burgers, made with simple ingredients and a quick rise.

Ingredients

Dough

  • 1 cup warm water (between 105ºF and 115ºF)
  • 3 tablespoons warm milk (between 105ºF and 115ºF)
  • 2 teaspoons instant yeast (or active dry yeast)
  • 2 1/2 tablespoons white sugar (divided)
  • 1 large egg (brought to room temperature)
  • 3 cups bread flour
  • 1/3 cup all-purpose flour
  • 1 1/2 teaspoons fine sea salt or Kosher salt
  • 2 1/2 tablespoons unsalted butter (slightly softened)

Egg wash

  • 1 large egg (beaten)
  • 1 tablespoon cold water

Toppings

  • optional sesame seeds

Instructions 

  • Mix warm water, warm milk, yeast, and 1/2 tablespoon sugar; let foam for 5 minutes.
  • Whisk egg separately. Combine dry ingredients in mixer, add yeast mixture, then egg, and knead with butter for 8-10 minutes until smooth.
  • Let dough rise in oiled bowl until doubled (~1-2 hours). Divide into 8 pieces, shape into balls, and let rise again until puffy (~45-60 mins).
  • Preheat oven to 400ºF (200ºC). Place water in pan on oven floor. Brush buns with egg wash, sprinkle sesame seeds if desired.
  • Bake for 15-18 minutes until golden brown. Cool on wire rack before slicing.

Notes

Resist adding extra flour; keep dough slightly sticky for best texture.
