These healthy, low-calorie blueberry protein balls are perfect for a quick snack or post-workout treat, combining natural sweetness with a boost of protein.

Ingredients

Fruit

  • 0.5 cup blueberries (fresh or frozen)
  • 5 pitted medjool dates medjool dates
  • 0.25 cup unsalted cashews
  • 0.5 cup old fashioned oats
  • 0.5 cup vanilla protein powder
  • 1-4 teaspoons water (add as needed)

Instructions 

  • Add blueberries, dates, and cashews to a food processor and blend until mostly pureed.
  • Add oats and protein powder, pulse until mixture resembles cookie dough.
  • If too dry, add water 1 teaspoon at a time, pulsing until dough comes together.
  • Scoop dough with a tablespoon and roll into balls, wetting hands if necessary.
  • Chill in the fridge for at least 30 minutes before serving.

Notes

Store in an airtight container in the fridge for up to 1 week.
