Instructions
Preheat oven to 350°F (175°C). Spray a 12-cup muffin pan with nonstick spray.
Blend cottage cheese until smooth. Whisk egg whites in a bowl, then mix in blended cottage cheese and seasonings.
Stir in chopped spinach, bell pepper, and green onions. Pour mixture into muffin cups, about three-quarters full.
Bake for 18–22 minutes until set and lightly puffed. Cool for 5 minutes before removing.
