Delight in these light and flavorful pumpkin cookies, perfect for a guilt-free treat during the fall season.

Ingredients

Dry Ingredients

  • 1 cup all-purpose flour (or Gluten Free Flour)
  • cup Zero Calorie All-Natural Brown Sugar
  • ½ teaspoon baking soda
  • teaspoon salt
  • ½ teaspoon pumpkin spice blend (plus more for topping)

Wet Ingredients

  • ¼ cup pure pumpkin puree
  • cup water
  • 1 cup Low Calorie Cream Cheese Frosting

Instructions 

  • Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  • Mix dry ingredients in a large bowl; whisk wet ingredients separately.
  • Combine wet and dry ingredients until just mixed.
  • Scoop 16 cookie balls onto the sheet, flatten slightly.
  • Bake for 7 minutes, cool, then top each with 1 tablespoon frosting and a dash of pumpkin spice.

Notes

For best results, use fresh pumpkin puree and measure ingredients accurately.
