Ingredients

Dairy & Eggs

  • 50 g Large Brown Egg Vital Farms
  • 15 ml Nonfat Milk Whole Foods
  • 75 g 0 Milkfat Yogurt Fage
  • 15 g Reduced Fat Neufchâtel Cheese Philadelphia
  • 30 ml Nonfat Milk Whole Foods
  • 30 g Mango Purée

Fruits & Sweeteners

  • 15 g Sugar Free Cheesecake Pudding Mix Jello
  • 30 g Mango Purée
  • 60 g Mango Slices

Syrups & Oils

  • 15 ml Sugar Free Syrup Mrs Butterworths
  • 3 second Olive Oil Spray
  • 2 slices Protein Bread Sola

Instructions 

  • Puréed about 1 small mango in a food processor or blender until smooth with some small lumps.
  • Whisk together eggs, milk, yogurt, cheese, and mango purée to make the batter.
  • Dip the bread slices into the batter, then cook on a skillet sprayed with olive oil spray until golden brown.
  • Serve topped with mango slices and drizzled with sugar-free syrup.

Notes

Use ripe mango for best flavor and adjust sweetness as needed.
