Delight in these sweet and tangy mango crumble bars, perfect for a quick dessert or snack with wholesome oats and fresh fruit.

Ingredients

Dough and topping

  • 1/2 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned whole-rolled oats
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar (packed)
  • 1/2 teaspoon salt (or to taste)

Filling

  • 2 cups coarsely chopped fresh ripe mango
  • 1/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons corn starch

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8-inch pan with foil and spray.
  • Melt butter, then mix with flour, oats, sugars, and salt. Set aside 1 cup for topping.
  • Press remaining oat mixture into the pan. Mix mango, sugar, lemon juice, and cornstarch; spread over crust.
  • Sprinkle reserved crumble over mango layer. Bake for 50 minutes until golden and bubbling.
  • Cool for 1 hour before slicing. Store airtight for up to 1 week at room temperature.

Notes

Use ripe mango for best flavor and adjust baking time if mangoes are very juicy.
