Delight in these rich cheesecake bars infused with Vermont maple syrup and topped with a luscious bourbon maple drizzle. Perfect for a sweet treat that combines creamy texture with a hint of bourbon flavor.

Ingredients

Crust

  • 0.75 cup softened butter
  • 0.5 cup powdered sugar
  • 1.5 cups all-purpose flour
  • 0.5 cup finely chopped pecans

Filling

  • 16 oz softened cream cheese
  • 1.25 cups pure Vermont Organic Bourbon Barrel-Aged Maple Syrup (separated ¾ cup for bars, ½ cup for drizzle)
  • 3 tablespoons bourbon (separated 2 for bars, 1 for drizzle)
  • 1.25 cups pure Vermont Maple Syrup (separated ¾ cup for bars, ½ cup for drizzle)
  • 1 tablespoon all-purpose flour
  • 0.25 teaspoon sea salt
  • 2 eggs lightly beaten eggs

Optional Topping

  • as needed toasted and halved pecans

Instructions 

  • Beat butter and cream cheese to room temperature. Preheat oven to 350°F (175°C). Line a 13x9-inch pan with foil and coat with cooking spray.
  • Mix butter and powdered sugar until combined. Add flour and stir until mixture sticks together. Stir in pecans. Press into pan and bake for 20 minutes.
  • Beat cream cheese until fluffy. Mix in maple syrup, bourbon, flour, and salt. Add eggs and combine. Pour over crust and bake for 25 minutes until edges are puffy. Cool and refrigerate for 2 hours.
  • Simmer maple syrup and bourbon in a saucepan for 10-12 minutes until thickened. Cool the drizzle.
  • Lift bars from pan using foil edges. Cut into bars, drizzle with maple syrup, and top with pecan halves.

Notes

Chill the bars thoroughly before serving for best texture.
