Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a bowl, whisk together flour, baking soda, salt, and cinnamon.
In a separate large bowl, beat softened butter and sugar until creamy. Mix in maple syrup, egg, and vanilla.
Gradually add dry ingredients to wet mixture until combined. Chill dough if needed.
Shape dough into balls, roll in cinnamon-sugar mixture, and place on baking sheets. Flatten slightly.
Bake for 10 minutes or until edges are golden. Cool on wire racks.
Notes
