A delicious and creamy chicken salad with sun dried tomatoes and fresh basil, perfect for a quick lunch or dinner.

Ingredients

Dressing

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tbsp oil from sun dried tomatoes
  • 1 tsp paprika
  • 1 tsp red pepper flakes
  • 1 tsp pepper
  • 1 tbsp garlic (minced)
  • 16 oz cooked chicken (shredded)
  • 1 cup sun dried tomatoes (diced)
  • 1/2 cup fresh shredded Parmesan cheese
  • 1/2 cup fresh basil leaves

Bread

Instructions 

  • Mix mayonnaise, sour cream, oil, paprika, red pepper flakes, pepper, and garlic in a bowl.
  • Combine chicken, sun dried tomatoes, Parmesan, and basil in another bowl.
  • Mix dressing into chicken mixture until coated.
  • Scoop onto bread and serve.

Notes

Use fresh basil for best flavor and serve immediately.
